If you haven’t been able to catch onto a theme of KP’s Kitchen yet, let me help to spell it out…. E.A.S.Y. I don’t have the time (really the energy) to have to prep a dish for an hour before it even cooks. I like to keep things simple using ingredients you most likely already have in your pantry and fridge! If you’re like me, you like to eat healthy while also eating something that doesn’t taste like cardboard (#AmIRight). A lot of healthy foods, especially snacks, get a bad rap tasting like cardboard, so I am here to prove foods can not only be healthy, but also mouthwateringly delicious!

What I love the most about these energy bites is there are so many different things you can put in these! Instead of chia seeds you can use flax seeds, shredded coconut, raisins… the possibilities are endless! I make these at the beginning of each week to grab out of the fridge in the morning before a workout or as a midday snack!
