The perfect refreshing snack to get you ready for spring! This recipe is so easy to whip up and is loaded with protein, you’ll want to keep some in your freezer at all times!

Let’s first start off by talking about some of the wonderful health benefits of greek yogurt:

-it contains calcium, protein, iodine, probiotics (women - you know how important these are), and vitamin B12.

-research has shown consuming greek yogurt can help improve mental health due to the probiotics.

With that being said, do you need more of a reason to include greek yogurt in your every day life? Sure, you could eat yogurt with some granola and berries, but why not make it fun and mix it up sometimes?

While this may seem more like a summer recipe, I’m already over the cold so anything to help me get in the spring spirit.. sign me up! Pin this recipe for activities with kids and to remember for any July 4th celebrations!

Notes for instructions:

I waited too long to cut the squares and by the time I did, it caused the bark to crack. It wasn't a big deal but if you want it to be in exact squares, I would suggest taking it out of the freezer after an hour and cutting the squares then placing back to finish freezing for another two hours.

I like to take out the squares I’m going to eat and let them sit for a few minutes before eating.

While the yogurt bark can last in the freezer for up to 3 months, I have a feeling it will be gone in less than a week. :)

Make it yours:

There are a variety of ways to make this more personalized or to fit your likes, so here are a few:

Use different berries. There’s no limit to what fruits you can use and that’s what I love about this recipe. Love pineapple? Go for it! Blackberries your fruit of choice? Add it to the bark!

Any vegans out there? I couldn’t have dairy for 9 years (I developed IBS in 6th grade) and couldn’t have any dairy, so I don’t really eat any dairy these days except for yogurt and occasionally goat cheese (yum! my favorite!), so if you want to make this vegan, use a plain, dairy-free yogurt option and maple syrup!

Peanut butter, chocolate, nuts, or granola. You name it and you can add it to this yogurt bark! I love a good hazelnut spread, so I may just have to add it in next time!
